Description
Yamada Nishiki and Akebono rice, both polished to 60%, are fermented using the yamahai method over an extended period at this Okayama brewery in the Mimasaka region. The yamahai process contributes a distinctive lemon-edged acidity alongside deep, savory umami, making it well suited from cold to warm serving temperatures.
