Description
Chochozunoutage (Chochozu's Banquet) from Fujinoi Shuzo, founded in 1886 on the Sea of Japan coast in Shibata City, Niigata, is a playfully named expression from a brewery whose identity is rooted in its coastal sandy-beach location and the Fuji no Izumi well used by Edo-period North Front trading ships. Brewed with soft water and the brewery's own-cultivated Ippon Jime rice from the Shiunji district, it reflects the relaxed, celebratory spirit of sake made near the sea.
