A daiginjo from an Ehime brewery founded in 1862 in Matsuyama's historic Matsumae area, named for the samurai spirit of purity. Brewed with Yamada Nishiki milled to 35%, using EK-1 yeast with an alcohol content of 15-16%. The sake meter value is +4, placing it in a slightly sweeter profile that complements its fragrant, clean character.
