A dry junmai with bottle pasteurization, brewed with Tochigi no Hoshi rice polished to 70%, from Tonoike Shuzo's Bo brand in Mashiko. Tochigi no Hoshi is a locally grown table rice used here at a higher polishing ratio to produce a crisp, dry food sake with sharp acidity that develops further complexity when warmed.
