Asahara Brewery's Black Label Biwa no Sasanami is a muroka nakadori namagenshu Junmai Ginjo, selecting only the middle-run portion of the press for maximum balance, then bottled unfiltered, unpasteurized, and undiluted at 60% polishing. Founded in 1882 in Moroyama, Saitama, the brewery is managed by fifth-generation brewers with a strong reputation for clean fermentation.
