Yamada Nishiki polished to 40% is the foundation of this daiginjo from Toyokuni Shuzo in Furumachi, Fukushima. Blue apple-like freshness opens in the glass, followed by a refined sweetness and the clean finish characteristic of the brewery's abukuma mountain water.
