Description

Yamada Nishiki polished to 55% is the base of this junmai ginjo from Asahizuru in Sakura, Chiba, pressed with the traditional fune method for clean, umami-forward sake without bitterness. The ginjo aroma is present but restrained, giving way to a full rice flavor and a light, balanced acidity. Acid level of 1.4 and a slightly negative nihonshu-do contribute to the smooth, approachable character.
