Yamada Nishiki polished to 50% is used in this daiginjo from Asahizuru in Sakura, Chiba, pressed using the traditional fune (tank) pressing method to extract a clean, nuanced sake with no off-flavors. The M310 yeast contributes a melon-like, graceful aroma, and the sake finishes with a smooth, refined mouthfeel. Asahizuru, founded in 1830, uses around 80% Chiba-grown rice across its lineup.
