Description

Time Machine 88 is a junmai brewed with Kita Nishiki polished to just 88%, replicating a 1712-era brewing method with no added yeast or lactic acid, extended 72-hour koji work, and a one-month fermentation starter. Alcohol is 8.8%, and the concentrated sweetness is cut by triple the acid and five to seven times the amino acids of a typical modern sake.
