Orizake is an unfiltered sake retaining rice sediment, released as a namanama-genshu (double-unpasteurized raw undiluted sake) by Yoro Shuzo in Ozu, Ehime. The sixth-generation owner-toji at this riverside Hijikawa brewery crafts it to balance structural strength, pronounced rice umami, and dry character, with an alcohol level of around 19%.
