Nakamoto Shuzo, based in Ikoma, Nara, has brewed exclusively junmai sake to at least ginjo standards since 2005. This junmai carries a steady umami presence with restrained acidity and a clean, dry finish, drawing on the ancient brewing heritage of the region.
