
Tenryohai Shuzo stands on Sado Island, Niigata Prefecture, drawing brewing water from underground streams fed by sacred Mount Kinpoku. The Utashiro brand, launched in 2019, was conceived as the brewery's vision of next-generation Niigata tanrei: lighter, juicier, and more openly inviting than the region's traditional dry style. Hiyori, meaning optimal day, is the most accessible expression in the line at 12.5% ABV, brewed with locally grown Yukishinose rice. Light and alive with aromas of banana and white peach, a refreshing effervescent lift, and a delicate, gently fruity finish, it is sake calibrated for the kind of unhurried afternoon the name evokes.
