Tanbayajihei Junmai Ginjo is brewed with Ehime-grown Matsuyama Mii rice milled to 50%, drawing on the brewery's lineage from its Edo-period founder, Yagi Jihei, who operated under the trade name Tanba-ya. Matsuyama Mii rice yields sake with a snappy, dry character and clean umami, reflecting the Imabari style shaped by Ishizuchi Mountain spring water.
