Daiginjo from this Hiroshima kura, using Yamada Nishiki polished to 30% and the Ginjo brewing techniques developed in Hiroshima with ultra-soft water of hardness 14. Winner of a gold award at the 2018 Wineglass Delicious Sake competition in the daiginjo category. The soft-water process produces a full yet fine-grained mouthfeel with a semi-dry profile.
