Suiryuu Junmai Ginjo is a pure rice ginjo sake from Kubohonkeshuzo in Nara under the Suiryuu label, fermented with rice polished to 60% or below to cultivate delicate fruity and floral notes. The ginjo brewing process uses specially selected yeast strains that produce aromatic esters at cold fermentation temperatures, giving this sake its lifted, fragrant character. Nara's soft water profile contributes to the gentle mouthfeel that defines this expression.
