Karakara (辛辛) means very dry, and this Shinomine Omachi Junmai Ginjo Ichibigenshu is a boldly dry undiluted expression from Chiyoshuzou in Nara. Omachi rice polished to 60% is fermented to dryness with Katsuragi spring water, then released at full genshu strength, combining Omachi's mineral depth with a sharp, clean finish.
