Shierivatto is a specialty sake from Koyamahonkeshuzou in Nada, Hyogo, aged in sherry casks, a technique inspired by Scotch whisky maturation. The porous wood of sherry barrels imparts oxidative notes, dried fruit aromas, and a warm amber hue not found in conventionally brewed sake. This crossover product reflects the brewery's experimental approach to blending Japanese fermentation with Western aging traditions.
