From Sasaiwai Sake Brewery, founded in 1899 in the Nishikan area of western Niigata along the historic Hokkoku Highway, Bessen means Specially Selected and represents a step above the everyday lineup. Niigata-grown Gohyakumangoku and Yuki no Sei rice, polished to 62%, and a small addition of distilled alcohol give this honjozo its characteristic Niigata lightness and a slightly drier, cleaner edge. The profile is mellow, rounded, and food-friendly: gentle umami, soft texture, and the clean, satisfying finish that defines the tanrei (light and dry) tradition Niigata has refined over generations. A quiet, reliable sake built for the table.
