
Sasaiwai Sake Brewery, founded in 1899 in Nishikan, Niigata, along the old Hokkoku Highway, distributes 90% of its production within the local community: a jizake philosophy that keeps its sake honest and its priorities local. The name Chikurinsoufu means 'cool breeze through the bamboo grove,' and the sake delivers exactly that. Brewed with heirloom Kamenoo and Yuki no Sei (Snow Spirit) rice, this tokubetsu honjozo is light and refreshing with gentle acidity, a clean Niigata dryness, and a mellow, cool finish that pairs naturally with the seafood and local dishes of the surrounding region.
