Asahi rice, an Okayama-native variety tracing back to Meiji-era pure-line selection, is polished to 65% for this junmaishu from Nanbashuzoten. Asahi is one of the few pre-modern sake rice varieties still in active production, known for rounded grains and a moderate sweetness that carries through into the finished sake.
