Sabaishigo is a local sake from Kashiwazaki City in Niigata Prefecture, named after the Sabaishi district that forms part of the city's rural heritage in the Chuetsu coastal region. Brewed in Niigata's signature light and dry style using locally grown rice and soft underground water filtered through mountain snowpack, it is crafted as an everyday jizake reflecting the regional terroir of the Sea of Japan coast.
