Miyama Nishiki polished to 80% retains most of the grain's outer layers in this low-polish junmai ginjo from Nakazen Shuzoten in Nagano Prefecture. The deliberately light polishing, unusual for a ginjo designation, highlights the grain's full character including bran and germ.
