
This junmai ginjo from Kanbai Syuzo in Miyagi combines a 40% polishing ratio with the fukurotsurushi bag-pressing method, in which the mash drips slowly through gravity in cloth bags without mechanical pressing. The result is an exceptionally transparent and refined sake, capturing the most aromatic free-run liquid while the highly milled rice contributes a clean, focused sweetness.
