Mansakunohana Junmai Ginjo Ichidohiiregenshu Misato Hiyaoroshi is an autumn hiyaoroshi release from Hinomaru Jozo in Yokote, Akita, single-pasteurized in spring, aged through summer, and shipped in fall without a second heat treatment. Named after the Misato region of Akita, it is bottled undiluted (genshu) for concentrated flavor, and the summer aging rounds out the youthful edges of the fresh-pressed sake into a mature, harmonious expression with full umami and gentle acidity. It is an exemplary seasonal release that bridges the brewery's summer and autumn rhythms.
