Kaiyama Junmai Daiginjo is brewed at 50% polish by Yamaki Shuzoten in Hokuto City, Yamanashi Prefecture, at the base of the Yatsugatake mountain range, where Kiso-system underground spring water provides the brewing foundation. The brewery, established in 1862, describes its junmai daiginjo as fragrantly refined with a full, complex sweetness and a pleasantly lingering finish.
