Junmai Fujinohikari Namachozoshu is a junmai sake from Adachihonke Shuzo that undergoes namachozo, storage in an unpasteurized state, before a single pasteurization prior to shipping. This process preserves the vibrancy of fresh-pressed sake while allowing it to develop subtle complexity during the cold-storage period common in Mie's cooler mountain-adjacent brewing facilities.
