Rice polished beyond 50 percent and brewed without added alcohol, this junmai daiginjo achieves the delicate, fragrant complexity of the daiginjo class while retaining the natural body and umami depth that distinguish pure-rice brewing from alcohol-added styles. Nara's clean water from the Yoshino highlands and the prefecture's venerable brewing history provide the foundation for this premium expression.
