
Founded in 1830 in Yaizu, Shizuoka, Isojiman Shuzo is counted among Japan's most admired breweries, a distinction earned through an unusual commitment: this honjozo uses Hyogo A-Grade Yamada Nishiki polished to 55%, far exceeding what the honjozo classification requires. Soft, mineral-rich water from the Southern Alps provides the base; a proprietary house yeast and an extended 72-hour koji development build extraordinary complexity throughout the tank. The result defies its label: aromas of steamed rice, muscat, and chestnut; a silky, light-bodied palate of dried tropical fruit and ocean umami; and a clean, precise finish ideal for pairing with delicate seafood.
