Honkin is produced by Sakenunoyahonkin Shuzo in Nagano, polished to 60%, by the oldest sake brewery in the prefecture, founded in 1540. The brewery uses a blend of locally sourced Nagano rice and traditional brewing techniques to craft a clean, food-compatible everyday sake.
