Kojimaiken is a honjozo from Ogata Shuzo in Ehime Prefecture. Brewed with the addition of a small quantity of distilled alcohol to accentuate aroma and give a clean finish, it draws on the soft water of the Ishizuchi range that defines Ehime's characteristically smooth, food-friendly brewing style.
