A honjozo from this 1643-founded Joetsu brewery, using Gohyakumangoku rice polished to 55% with snowmelt water from Echigo's mountains. True to the Niigata淡麗辛口 tradition, it is light on the palate with a clean, dry finish characteristic of Echigo toji craftsmanship.
