Kikyodaiko Nama is a honjozo using Hatsushimo rice polished to 65%, bottled unpasteurized to preserve its fresh character. Hatsushimo's large-grain structure gives the sake substantial rice flavor, and the single-fire pasteurization approach of the brewery's standard lineup is set aside here to keep the profile bright and direct.
