Imanishi Seibei Shoten, founded in 1884 in the historic Naramachi quarter near Nara's sacred deer park, brews the Harushika line with an eye toward the ancient capital's brewing heritage. The Sakura Label Junmai uses Hinohikari, a premium table rice polished to 60%, and is brewed to an SMV of negative ten for a gently sweet style that invites wide food pairing. A refreshing aroma of fresh verdure with a hint of peppermint leads into a mild, creamy palate balanced by crisp acidity and satisfying savory rice depth. Equally rewarding chilled or lightly warmed alongside Japanese home cooking.
