Harushika Junmai Ginjonamatsumezake Hiyaoroshi from KK Imanishiseibeisyouten in Nara is a summer-aged, autumn-release sake that is pasteurized once in spring and then stored over the warm months before being released without a second pasteurization in the fall. This hiyaoroshi tradition results in a sake with a smooth, rounded character developed through summer maturation.
