Hakuinmasamune Karakutijunmaisyu is a dry junmai using Homare Fuji and Aichi no Kaori, both polished to 65%, from Takashima Brewing in Shizuoka. Homare Fuji is Shizuoka's indigenous sake rice developed specifically for the prefecture's soft water; the karakuchi (dry) style delivers a clean, food-pairing finish.
