Gonza Junmai Ginjo from Kita Shuzo in Shiga draws its name from Gonza, a historic figure or local landmark associated with the area, grounding this pure-rice ginjo in the specific cultural and geographical heritage of Shiga Prefecture. Brewed near Lake Biwa, Japan's largest freshwater lake, the brewery benefits from water shaped by the lake's vast catchment and the surrounding mountains of the Kinki highlands. Without added alcohol and with rice milled to ginjo standards, this sake delivers a clean, moderately fragrant profile with the natural body characteristic of junmai fermentation in the Lake Biwa region.
