1896년(메이지 29년)에 창업하여, 대대로 이즈모 모리(두장)가 손으로 직접 빚는 수제 양조를 이어가고 있습니다. 1990년에는 이즈모 지방 특유의 양조법을 부활시키고, 50년 만에 이즈모 지역 술을 復刻하는 등 마쓰에를 중심으로 한 지역 음식 문화의 일익을 담당하고 있습니다. '도요노아키(豊の秋)'라는 이름은 원료 쌀은 물론 오곡의 풍작을 기원하는 의미를 담아 붙여졌으며, '풍만하고 편안한' 술을 모토로 시마네현산 원료를 중심으로 목제 도구를 활용한 수공 양조를 지향하고 있습니다.
