Yamadaho rice polished to 45% forms this Shizuoka junmai daiginjo, a non-fukuro-tsuri version of the bag-pressed expression. Brewed in 600-kg small batches with Okitsu River spring water and long, low-temperature fermentation, it carries an aromatic, full-bodied profile with a clean finish.
