Elements of Life Ep. Sakura from Emishiki Shuzo in Koka City, Shiga uses the brewery's pioneering re-brewing method inspired by German Trockenbeerenauslese noble rot wine. Founded in 1892, 5th-generation Takeshima Mitsuyoshi crafts this seasonal cherry blossom expression with 100% Shiga contract-farmed rice, no brewing alcohol or enzymes, and a traditional sase-shiki basket press.
