The Origarami Hakuyou (Lees-Attached White Poplar) Junmai Ginjo Murokanamagenshu from Fuji Shuzo in Tsuruoka, Yamagata, uses Miyama Nishiki at 60% polish and is released with fine lees still suspended in the sake, giving a softly cloudy appearance and textured mouthfeel. Bottled unpasteurized and undiluted from this 1778-founded brewery, it offers a delicately hazy, fresh expression of muroka nama genshu style.
