Eiko Fuji's Yamada Nishiki Junmai Daiginjo Murokanamagenshu from Fuji Shuzo in Tsuruoka, Yamagata, uses the king of sake rice polished to 50% for a classic, benchmark expression of the brewery's unfiltered, unpasteurized, undiluted style. Founded in 1778, with the 13th generation head brewer Kodai Kato holding a national gold medal, the brewery produces Yamada Nishiki at its most direct and expressive.
