Chiyotsuru Josen Honjozo is a standard honjozo polished to 65% from one of Tokyo's few surviving sake breweries in Akiruno. Brewed with the soft mountain water of the Akigawa River, this everyday expression draws on simplicity and the traditional Tokyo brewing style.
