Naranoshimbutsushugonosake (sake of Nara's syncretic Shinto-Buddhist tradition) is a junmai brewed following a 15th-to-17th century temple manuscript recipe from Kofukuji temple, polished to 95% in an eight-stage (hachidan) fermentation. It yields a sweet, rich palate reminiscent of ripe persimmon with light bitterness and a clean finish.
