
Chiyonohikari Tarusake is a cedar barrel-aged Honjozo from this 1860-founded Myoko City brewery, where Gohyakumangoku at 56% forms the sake base before aging in yoshino cedar casks. The cedar infusion adds a pleasant woody fragrance and subtle astringency that complements the brewery's light, clean Niigata style.
