Setchuu Tangetsu (雪中貯蔵), meaning snow-buried aging, uses the deep snowdrifts of Myoko City to provide natural refrigerated storage for this Honjozo. Made with Gohyakumangoku polished to 56%, Chiyonohikari's yukimuro-style aging allows the sake to slowly develop a smooth, integrated character shaped by Niigata's legendary winter snowpack.
