Japanese Ginger Rice

What you'll need
- 200 g ginger
- 3 cups Japanese short grain rice
- 600 ml water
- <Seasonings>
- 1 tbsp granulated dashi powder
- 1 tbsp sugar
- 1 tsp kombu tea powder
- 100 ml sake
- 30 ml soy sauce
- <Optional Garnish>
- Chopped green onions
- Shichimi chili pepper
How to make it
Rinse the rice, soak it in water, then drain well. In a separate bowl, combine the water, dashi powder, sugar, kombu tea powder, sake, and soy sauce. Thinly slice the ginger.

Transfer the rice to a rice cooker and pour in the prepared seasoning mixture. Stir gently once, then spread the sliced ginger evenly over the surface. Do not mix the ginger into the rice, as this may prevent the rice from cooking evenly.



Cook using the regular rice setting. Once finished, gently fluff the rice, serve in bowls, and garnish with chopped green onions or shichimi chili pepper if desired.

Tips
- Fresh young ginger gives the rice a brighter aroma and a more delicate sweetness when it's in season.
- Slice the ginger as thinly as possible so its flavor spreads evenly throughout the rice.
