Tsukinoi Junmai Ginjo Hiyaorosi est une édition saisonnière d'automne de KK Tsukinoishuzouten à Ibaraki, brassée en hiver et conservée tout l'été avant d'être commercialisée au début de l'automne sans une seconde pasteurisation. Ce processus de pasteurisation unique, associé à la maturation estivale, développe un caractère arrondi et moelleux dans ce junmai ginjo qui reflète la pratique traditionnelle d'embouteillage saisonnier hiyaoroshi.
