Hyogo Kita Nishiki et Yamada Nishiki, tous deux cultivés dans les propres champs exempts de produits chimiques de la brasserie, sont utilisés pour ce Honjozo genshu cru et non dilué. Le riz auto-cultivé et l'eau de source tirée d'un puits sur site à la brasserie d'Akashi se combinent avec une fermentation méticuleuse à basse température pour donner au sake un umami dense et une finale sèche et affirmée.
