Sanintogo Kimoto Junmai Namagenshu Tamasakai utilise le riz Tama Sakae dans une expression non filtrée fermentée en kimoto de la Fukura Shuzo à Yurihama, dans la préfecture de Tottori. Fondée en 1889, cette brasserie au bord du lac se spécialise dans la tradition des toji d'Izumo, en utilisant la proximité du lac Togo pour forger sa philosophie d'accord mets-sake.
