Sae (冴) Tokubetsu Junmai Tomitsuru associe du Yamada Nishiki et du Gin Fubuki (吟吹雪) poli à 60 %, produit par Aichi Shuzo à Aishō-cho, Shiga. Cette petite brasserie (fondée en 1869, ~1 000 litres par an) près du lac Biwa utilise l'eau de la chaîne de montagnes Suzuka et possède la certification GI Shiga, produisant un sake de riz pur dont l'élégance équilibrée reflète la clarté sereine que son nom évoque.
